Super Bowl and over-eating seem to go hand in hand.  With Ralph and I working to drop a few pounds, we have been looking for healthier, but still festive, alternatives!  Found this wonderful option on the Modern Comfort Food blog.  Since our teams didn’t make it to the playoffs, the latter part of the season has been primarily academic.  This entrée is fairly neutral in theme so our menu does not favor one side or the other, fitting our official football politics perfectly.  Although I have to confess we’ll likely serve some cheese, but will be avoiding Philly-steaks…
